Today is an exciting day because we are going to be making Peppermint Chocolate Brownie Truffles and a White Chocolate Cranberry Bliss Truffle. That is such a mouthful! But this is going to be so fun.
These are great for the festive season and for those who are still trying to stick to their goals and eat fun treats too. I don’t like it when some recipes talk to much before the beginning of making this recipe. So we will get into it right away!
These treats are going to be packed with protein, healthy fat, and just the right amount of sweetness. here is what you will need:
- Food processor. This is going to make it the easiest. I do not recommend using a blender.
- A food scale. I have this one from Amazon and I LOVE it, it was so affordable. It makes counting calories and recipe creation easy.
- Nuts: cashew, macadamia, pecan, or almond will work. The softer it is, the better it will be.
- Sugar-free or regular white chocolate chips. I love Lilly’s Sugar-Free chocolate chips
- Medjewl Dates (I get Mine from Costco! it is so much cheaper.)
- Dried cranberries or fresh
- Chocolate Protein Powder & Vanilla protein powder OR Hot Cocoa Mix
- White chocolate (Sugar free or regular- why not?!)
- Crushed peppermint or candy cane
- Peppermint extract (can omit though 🙂 )

Let’s talk about Portion size
This is something that can make or break a person’s weight goals. It is 100% okay to have indulgences when you want them, however, the serving sizes and portions are what matters. It is important to be aware of what you are consuming and be conscious of it. You don’t have to track your calories, but pay attention to them too 🙂
Being mindful when eating treats like these-even though they are healthy- is going to be better for your mental health and body. These are decadent, sweet, and delicious. But they are also rich! You might want more than 1, and that’s okay too.
But it is nice to have something healthy and delicious to bring over to a family get together (if you are gathering this year) or to have in the freezer when the sweet tooth for something festive hits!
Summary: These aren’t that low calorie, as they contain high energy-dense ingredients like nut butter, nuts, and dates. Be mindful about how much you eat and enjoy whatever you do eat. There is no point in feeling guilty if you overindulge. Just be mindful about it and keep living your life 😉
Peppermint Chocolate Brownie Truffles
These Peppermint brownie energy balls are insane. These truffles are gooey, rich, fudgy with the right amount of peppermint crunch and chocolatey-ness. I used Starbucks Hot cocoa mix for a rich yet balanced sweet flavor but feel free to use whatever chocolate you have. You can never go wrong with chocolate amiright? hehe. These are super easy to make!
Popular opinion: It is DANG hard to dip things in chocolate?? I had a hard time with it (and always have…) and think it is an art that needs to be practiced in order to look pretty hehe.
Peppermint Brownie Truffles (healthy)
Equipment
- Food Processor
Ingredients
- 132 g Medjewl Dates
- 32 g raw Pecans
- 25 g raw cashews
- 1 TBS Hot Cocoa Mix I use Starbucks Hot Cocoa mix. Can use cocoa or protein powder
- 2 TBS Almond Butter can use almond butter
- ½ tsp vanilla
- ¼ tsp salt
- 1 Candy Cane
- ¼ tsp Peppermint Extract This amount is the perfect amount! You can add more if you want.
Instructions
- Measure your cashews, pecans, and dates on a food scale. Add to the Food processor. Blend until crumbly or well mixed together. its okay if there are a few nut chunks.
- After, Add in nut butter, peppermint extract, vanilla, and salt. If the mix is really dry (it shouldnt be because of the dates) you can add .5 to 1 tbs of milk. If you add to much it will be to sticky.
- After it comes together, you can put in a small mixing bowl, add in some crushed candy cane (I only put about 1 tsp of candy cane crunch). Set in fridge or freezer for about 10-20 minutes to firm it up and make balls.
- After it is cold enough to work with, Roll into balls. I used a scale to make each ball the right size but you should end up with 9-10 balls. Drizzle some melted dark chocolate or crushed candy cane. Set in fridge or freezer. Keep in fridge or freezer and enjoy!

White Chocolate Cranberry Bliss Truffle
Let’s talk about that Starbucks cranberry bliss bar for a second. I don’t know what it tastes like, but I do know, that it packs quite a bit of sugar, bad fats, and calories.
Not exactly what we need for trying to achieve our goals and live a healthier lifestyle. Of course, those are okay every now and then (especially since they are only available for a short time), but when you want a little bit of that taste without going overboard, I got you, friend. These are so delish and so sweet they pack the punch without all the yucky stuff!
White Chocolate Cranberry Orange Bliss Balls
Equipment
- Food Processor
Ingredients
- 132 g Medjewl Dates
- 30 g Cashews
- 25 g Macadamia Nuts
- 15 g Pecans
- 2 TBS Cashew Butter
- 3 TBS Oat Flour
- 1 TBS Vanilla Protein Powder
- 2 tsp Orange Zest You can adjust this to your liking.
- 1 TBS Orange Juice from orange you can adjust this too
- ¼ cup Fresh or dried cranberries I used dried, but they were hard in the ball. if you dont want it hard, use fresh.
- .5 tsp Salt
- 1 bar OR 2 tbs of chips White Chocolate You can add SF white chocolate chips to the batter or drizzle with white chocolate.
Instructions
- Weigh out Nuts and dates on the scale. Add to the food processor and process untill crumbly, scrape down the sides if necessary.
- Add in Nut butter, salt, orange juice
- The batter might be a bit wet, thats okay! add in the oat flour and the protein powder. If it is still a bit wet, add more oat flour. It will also set up in the fridge later on.
- Now after mixed, move into a small mixing bowl. Fold in cranberries, orange zest, and white chocolate chips if using. Set in freezer for a good 30 minutes or so.
- Once nice and cold, make balls into a 25g serving each. Other wise, make 12 balls and drizzle with white chocolate or top with more orange zest. Enjoy!

Ah.. I hope you guys like these! I love them. They are a little sweet but you can adjust that by omitting the coating and decreasing the dates. Otherwise, I didn’t realize how much work food bloggers put into their posts.
