Peppermint Brownie Truffles (healthy)

Ooey gooey peppermint chocolate brownie truffles. Made with nuts, dates, cocoa, and peppermint covered in a rich dark chocolate and topped with candy cane dustings.

Ingredients
  

  • 132 g Medjewl Dates
  • 32 g raw Pecans
  • 25 g raw cashews
  • 1 TBS Hot Cocoa Mix I use Starbucks Hot Cocoa mix. Can use cocoa or protein powder
  • 2 TBS Almond Butter can use almond butter
  • ½ tsp vanilla
  • ¼ tsp salt
  • 1 Candy Cane
  • ¼ tsp Peppermint Extract This amount is the perfect amount! You can add more if you want.

Instructions
 

  • Measure your cashews, pecans, and dates on a food scale. Add to the Food processor. Blend until crumbly or well mixed together. its okay if there are a few nut chunks.
  • After, Add in nut butter, peppermint extract, vanilla, and salt. If the mix is really dry (it shouldnt be because of the dates) you can add .5 to 1 tbs of milk. If you add to much it will be to sticky.
  • After it comes together, you can put in a small mixing bowl, add in some crushed candy cane (I only put about 1 tsp of candy cane crunch). Set in fridge or freezer for about 10-20 minutes to firm it up and make balls.
  • After it is cold enough to work with, Roll into balls. I used a scale to make each ball the right size but you should end up with 9-10 balls. Drizzle some melted dark chocolate or crushed candy cane. Set in fridge or freezer. Keep in fridge or freezer and enjoy!
